I am amazed as to how sharp this knife is. I was wiping it clean with a sponge(very carefully I might add) and managed to slice a piece of the sponge off about the thickness of a sheet of paper. It is great to use when cutting chicken breasts because it slices it thin without shredding the meat. The balance is very good and comfortable to use.

I am cheap and it pains me to spend money. Especially 50 bucks on a knife? When I wanted a nice ceramic knife, I cheaped out and bought the shenzhen version instead because they were less expensive and had good reviews. However, after using the shenzhen for a few weeks, I noticed that there were more and more nicks on my knife (I followed all the proper ceramic knife usage guidelines of course). And eventually the knifes became dull over 2 months. Completely unacceptable considering it is a pain in the ass to find a place to sharpen ceramic knives.

So I decided to buy these japanese knives to see if the same thing happens. Safe to say I will never buy a shenzhen knife again. These knives are superior in durability and quality control. I have been using these for half a year and they are still as sharp when I got them in the mail. Don't cheap out like me and just buy these. It will save you money in the long run.

Also Kyocera offers free knife sharpen from their center in California (awesome!).
